It’s the time of year when the lavender is in full bloom
So why not take time to really enjoy some?
The fragant alone is enough for me to enjoy
there is just something beautiful about the simplicity of this plant
You can just cut some and stick it in vases throughout your home
or you can play around as I did
and make some homemade
5 cups water
1 cup sugar
1 tablespoon dried lavender flowers
1 cup fresh squeezed lemon juice
zest from 2 lemons
*In a large saucespan, bring water and sugar to a boil. Remove from heat; add lavender. Cover and let stand for 40 minutes to 1 hour. Strain, discarding lavender (I just pour from one sauce pan to another over a strainer lined with a paper towel. Stir in cold water and lemon juice and chill for a while or serve you can serve immediately over ice. (6 servings)
OR HOW ABOUT HOMEMADE LAVENDER VANILLA CUPCAKES?
And then enjoy them both at a table set under a shade tree
1-3/4 cups all-purpose flour
1 1/2 teaspoons baking poweder
2 teaspoons driend lavender
1/2 teaspoon salt
1 cup sugar
1/4 cup honey
1 teaspoon vanilla
2/3 cup milk
Allow butter and eggs to stand at room tempertaure for 30 minutes. Meanwhile, line 48 mini muffic cups or 18 regular muffin cups with paper liners. In a medium bowl combine, flour, baking powder, the 2 teaspoons lavender, and salt. Set aside
Preheat oven to 350 degrees F. In a large mixing bowl beat butter with an electric mixer on medium to thigh speen for 30 seconds. Add sugar, honey and vanilla; beat until combined. Add eggs, one at a time, beating well after each addtion. alternately add flur mixture and milk to butter mixture, beating on low speed after each addition just until mixture is combined.
Spoon batter into muffin cups, filling about 3/4 full. Bake for 10 to 12 minutes for mini or 16-18 for regular size.
Pipe or spread with Honey Frosting.
1 8 ounce cream cheese softened
2 tablespoons butter room temperature
3 tablspoons honey
1/2 teaspoon vanilla
2 1/2 to 3 cups powder sugar.
